Sometimes the best meals are actually the simplest ones. Good chicken, something creamy on the side and a sauce that ties everything together. What I like most about this dish is the combination and balance. The freshness of lemon, the sweetness of corn and that subtle tarragon flavour. Then there’s the fennel salad on the side, bringing freshness and crunch to cut through the richness.

✨ 3xT — Tips, Tricks & Twists
Tip: Salt the chicken in advance.
Even one hour makes a noticeable difference to flavour and juiciness.
Trick: Reduce the sauce slowly.
This concentrates the flavours and gives a much better result.
Twist: Lemon zest in the polenta 🍋
A small detail that lifts the whole dish.
Bonus: Fennel is best sliced paper-thin.
It stays crisp and brings a beautiful freshness to the plate.
